Broiled Salmon w/ Herb Mustard Glaze (Main Course)

Ingredients:

  • 2 garlic cloves
  • 6 salmon fillets
  • 6 lemon wedges
  • Non-stick olive oil cooking spray
  • Salt & black pepper
  • 3/4 teaspoon chopped rosemary =  = 4 mL rosemary
  • 3/4 teaspoon chopped thyme = = 4 mL thyme
  • 1 tablespoon dry white wine = == 15 mL white wine
  • 1 tablespoon extra-virgin olive oil = == 15 mL oil
  • 2 tablespoons Dijon mustard = = 30 mL mustard
  • 2 tablespoons whole-grain mustard = == 30 mL mustard

Directions:

1. Combine garlic, rosemary, thyme, wine, oil, Dijon mustard, and 15 mL of the whole-grain mustard in a food processor. Grind for about 30 seconds, and then transfer the mixture to a small bowl. Mix in the remaining 15 mL of the whole-grain mustard.

2. Preheat the broiler. Line a baking sheet with foil and cooking spray. Arrange the salmon fillets on the baking sheet, and sprinkle salt and pepper over them.

3. Broil for 2 minutes. Spoon the mustard sauce over the fillets. Continue cooking the fillets in the broiler until they are golden-brown, roughly 5 minutes longer.

4. Transfer cooked fillets to plates, and serve with lemon wedges.
